Dieses schmackhafte französische Nationalgericht ist in der Mitte von Frankreich, in Burgund, zu Hause. Und das nicht ohne Grund, denn es entstand gerade da, wo die Charolais-Rinder auf unendlich großen Wiesen und Weideflächen leben. Das ganze Geheimnis dieses Rindfleischtopfes (Boeuf bourguignon) ist, dass man es auf kleiner Flamme möglichst lange schmoren lässt, so dass man es ohne Mühe nur mit der Gabel zerkleinern kann. So wäre dies ja genau richtig, für den Weihnachtsabend, das Essen wird schon in der aller Frühe aufgesetzt, und stört nicht beim Weihnachtsbaumklauen, oder frühzeitiges Weihnachtsgeschenkebesorgen.
Das Rezept:
Zutaten: für 4 Personen
750g Angusrinderschmorbraten, 125g Schinkenspeck, 4 Karotten, 5 Zwiebeln, 2 Knoblauchzehen, 200g braune Champignons, 1 Essl. Tomatenmark, 1 Lorbeerblatt, Kräuter der Provence, eine Flasche Burgunderwein, vielleicht etwas Cognac, Fleischbrühe je nach Geschmack, schwarzer Pfeffer.
Zubereitung:
Fleisch in große Würfel schneiden, anbraten und würzen, aufgießen mit Rotwein. Den Speck, die Champinons mit den Zwiebeln extra anbraten, und zum Fleisch dazugeben. Das Fleisch sollte in Rotwein baden und das Ganze bei kleiner Flamme ca. 2 Stunden köcheln lassen. Fertig ist das Gericht, wenn die Soße so richtig eingekocht ist. Dazu isst man Baguette und einen Salat der Jahreszeit. Guten Appetit.
