Nun ist endlich das Frühjahr da, mit allem was dazu gehört. Die Blüten begeistern und das Grün ist satt. Die Kälber tanzen auf der Weide, und die Kühe genießen die volle, satte Weide. Die kleinen Gänse sind geschlüpft und baden auf dem Weiher unter Aufsicht ihrer Eltern. Der Bauer plant schon für die Winterfütterung und die Bäuerin kommt aus dem Garten nicht mehr heraus. Alles ist im Lot, der erste eigene Salat ist schon gegessen und die Monstranzbohne ist am Keimen. Diese seltene Stangenbohne habe ich aus Südtirol aus einem Bauernhausmuseum. Mit fünf trockenen Bohnenkernen fuhr ich nach Hause, und heute bin ich reich an Monstranzbohnenkernen. Warum sie Monstranzbohnen heißen, ist nach ihrer Betrachtung klar, denn um den Nabel der Bohnen, ist eine Monstranzzeichnung. Früher sind die getrockneten Bohnen aufgefädelt worden zu einem Rosenkranz. Vom Geschmack her, sind sie der normalen Bohne, ob grün oder getrocknet, gleich.

Mein heutiges Rezept, ist einfach und schnell zubereitet!

Ca. 400g Angusrinderhackfleisch mit kleiner Zwiebel, Salz und Pfeffer in der Pfanne gut anbraten. Frische Cocktailtomaten, ca. 200g, dazugeben, weiter köcheln lassen.
Etwas Zucker dazu, eine Handvoll frisch gehacktes Basilikum, etwas Brühe. Eigentlich wäre die Füllung nun fertig. Aber ich gebe einen Ziegenfrischkäse dazu, schmeckt nicht Jedem, wer es nicht mag gibt einen Schlag Creme fraiche dazu.
Die Cannelloni werden gefüllt, in eine Form gelegt, darüber wird eine Bechamelsauce gegeben. Parmesankäse, fertig.

Nicht zu vergessen, unsere Kunden, möchten wir weiterhin mit Qualität beliefern, und damit auch ihren Gaumen verwöhnen.
