Ein Rezept von Marliese Heinzmann
Auf der Suche nach neuen Rezepten, fand ich einen Bericht in einer Gourmetzeitung über einen Landwirt in Australien, der seinen Waghurindern eine Rotweinfuttermischung anbietet. Aufmerksam und interessiert las ich, dass dadurch eine noch bessere Fettverteilung im Körper einer Kuh gewährleistet ist. Die Zeitung schreibt von einer aufwendigen Tierhaltung, mit Weidehaltung, gezielte Fütterung um ein möglichst großes Schlachtgewicht zu erreichen. Der Preis eines sogenannten Kobesteaks macht seinen Namen alle Ehre. Ein Kilo Waghurinderfilet kostet 270 Euro. Da dachte ich an meine Angusrinder, das Kilo so um die 11 Euro, mit keiner Rotweinmischung gefüttert. Weiter dachte ich an die gesamte Landwirtschaft hier in Bayern. Weidebetrieb ist aufwendig, deshalb stehen die Kühe im Stall. Auf Gittern, kein Stroh, meistens ist der Stall dunkel und stickig. Die Fütterung mit frischem Grün und im Winter Heu ist meistens nicht mehr vorhanden. Denn eine Ganzjahressilagefütterung ist einfacher und bequemer. Eine Kuh bekommt im Schnitt höchstens 1,4 Kälber, dann ist sie reif für den Metzger, da bei der großen Leistung, die sie täglich bringen muss, ihr die Kraft ausgeht, und sie einfach keine Lust mehr hat Kälber zu bekommen. Der Tierarzt ist der ständige Begleiter des Bauern. Schwierige Kälbergeburten, Euterentzündungen, Klauenkrankheiten. Eine Kuh in einen Anbindestall, hat die Möglichkeit einen Schritt nach vorne und einen Schritt nach hinten. Das ist ihr Leben, fressen, verdauen, Milch erzeugen, Kälber auf die Welt bringen, aus. Ein kurzes heftiges armseeliges Leben. Dabei steht der Bauer jeden Tag im Stall, ringt um einen guten Fleischpreis seiner Kälber, und um seine Milch- und Fleischleistung. Manche junge Generation auf den Bauernhöfen, die da nicht mehr weiter macht, kann ich verstehen. Hier muss etwas passieren. Auf der einen Seite eine lebenswerte Rinderhaltung mit Auslauf, eine Fütterung die der Kuh gerecht wird, eine Hausapotheke, einen Stier, und noch viele andere Dinge mehr. Und wenn dies alles passiert ist, dann schaut nicht nur unserer Bauer glücklicher aus, sondern auch unsere Kuh, und unser Kunde, der wert darauf legt, wenn er schon Rindfleisch isst ,dann doch bitteschön von glücklichen Kühen mit keinen großen Medikamenteneinsatz. Einfach für jeden Bauern ist das nicht, dies umzusetzen, denn es kostet viel Geld, dies umzusetzen, und die Bank zahlt nicht jeden für die idealistische Idee Tiergesundheit mit artgerechter Tierhaltung. Oje mine, bleibt mir nur zu sagen, gehe in meinen Laufstall, streue Stroh ein, füttere Heu und Heusilage, und verspreche meinen Kühen, dass es bald soweit ist, mit dem Weideauftrieb von wenigen Wochen alten Kälbern, bis hin zu unserer Burgl, die 13 Kälber auf die Welt brachte und nun im Ruhestand lebt und wahrscheinlich heuer kein Kalb mehr auf die Welt bringen kann. Schade. Nach so einer Bestandaufnahme geht es uns hier in Hochholz dann etwas besser, denn immer wieder fragen wir, ob denn das alles Sinn hat mit unserer Landwirtschaft. Viel Arbeit wenig Geld, viel Geduld und Mühe, Weiterbildung in der Naturmedizin, Erweiterung der Kurzrasenweide, ausgewogene Winterfütterung, und eine erfolgreiche Züchtung. Niederschläge gibt es immer wieder, das gibt es auch bei glücklichen Kühen. Ein Hoffen und ein Bangen, und auch Stolz, jedes Jahr ein Stückchen weiter. Vielleicht irgendwann mit Rotwein, oder Koberind oder ganz einfach, ein Stück Land mit Tieren und Zufriedenheit und ein Glas Rotwein am Abend, nach einen erfolgreichen Arbeitstag.
Zurück zu meinem Rezept. Ochsenbrust vom Angusrind. Die Ochsenbrust wird gekocht mit Suppengrün, Salz und Pfeffer, etwas Muskat, Knoblauch und vielleicht auch etwas Zitronenschale oder Weißwein. Lorbeerblatt und Wacholderbeere und natürlich das Fleisch ins heiße Wasser legen, dass sich die Poren schließen. Die weichgekochte Ochsenbrust in der Brühe erkalten lassen, danach dünn aufschneiden. Dazu gibt es eine kalte Sauce Vinaigrette oder die bekannte Grüne Soße.
Sauce Vinaigrette:
Senf, etwas Essig, Salz und Pfeffer verrühren, Olivenöl dazugeben und schlagen, bis die Masse sämig ist. Hartgekochtes Ei, Zwiebel und Petersilie fein wiegen, zur Soße geben. Nochmals abschmecken mit Knoblauch und Salz oder etwas Zucker.
Grüne Soße:
Das gekochte Eigelb von 3 Eiern mit der Gabel zerdrücken, mit Olivenöl etwas Salz und Pfeffer, Essig, Senf, Kapern, Knoblauchzehe würzen, feingehackte Zwiebel und eine Essiggurke dazu geben. Mit Sahne oder Joghurt abschmecken, Dazu kommen nun die berühmten 7 Kräuter, die da sind, Petersilie, Kerbel, Borretsch, Kresse, Sauerampfer, Zitronenmelisse, Pimpernelle. Alle Kräuter fein wiegen, zu der Masse geben. Abschmecken.
