Zur Geschichte des Lungenbratens: Die Bezeichnung Lungenbraten hat ihre eigene Wortgeschichte. Der Lungenbraten hat nichts mit der Lunge zu tun.
Im Register: Über die Österreichischen Wörter zum Wienerischen bewährten Koch-Buch, 1772 in Bamberg und Würzburg erschienen, wird erklärt: Lungel-Braten vom Rindfleisch was inwendig am Ruckgrad sitzt. Schon im Buch von guter spise aus dem 14. Jahrhundert gibt es einen hirschen lumelbraten, in der Schweiz findet man heute noch einen Lummelbraten. Auch unser Lungenbraten müsste korrekterweise so heißen. Denn das Wort leitet sich vom lateinischen Wort „lumbus“ = Lende ab. Daraus wurde im Mittelalter lume, lumpe, im Alt-Wien der Barockzeit sagte man dazu noch Lummelbraten oder Lumpelbraten. Im 18. Jahrhundert erscheint bereits die Form Lungel-Bratl. In den folgenden Jahrzehnten bildete sich dann unsere irreführende Bezeichnung Lungenbraten. In Deutschland: Lendenbraten.
Also, na ja, gestern habe ich mir das Fußballspiel Österreich gegen Deutschland angeschaut. Die Deutschen gewannen nach einem langweiligen Spiel, die Österreicher wären nach einem Sieg vielleicht etwas überheblich geworden. Denn Deutschland zu besiegen, im Fußball, wäre ihr Wahnsinn, im Positiven. Wenn ich da an ihre Kochrezepte denke, sind sie wahrscheinlich doch eher die Besseren, allein die Süßspeisen oder auch ihre Bezeichnungen der Speisen, dazwischen sind Welten zu unserer sogenannten Deutschen Speisekarte.
Zutaten:
4 Scheiben Rinderlende, Butter, Blätterteig, 400g oder mehr Champignons, Charlotten, Salz, Pfeffer, Worcester-Sauce, Ei, weiße Rübe, Zucker, etwas Sekt, Sahne, Brühe.
Zubereitung:
Eine Auflaufform mit Butter ausstreichen und auslegen mit Blätterteig. Fleisch, Champignons, und weiße Rübe, alles extra einzeln anbraten. Fleisch mit Worcester-Sauce und Sekt, Salz und Pfeffer abschmecken. Die Champignons mit den Charlotten dünsten, wieder abschmecken, vielleicht etwas Sahne. Die Rübe dünsten, davor Butter und Zucker kandieren lassen, mit Sahne und etwas Brühe abschmecken. Fleisch in die Auflaufform geben, dann die Pilze, dann die Rübe, dann den Auflauf mit dem restlichen Blätterteig bedecken. Den sogenannten Deckel mit Ei bestreichen. Fertig. Im vorgeheizten Rohr 45 Minuten goldgelb backen. Dazu Salat und ein spannendes Fußballspiel gegen Portugal.

Mein Garten duftet, Rosen blühen, der Rittersporn ist da, und so manche Pfingstrose hält sich tapfer, wie auch das Unkraut, das aber nicht mehr so genannt werden will, sondern jetzt sich Beikraut nennt.
