Viele Köchinnen und Köche haben Schwierigkeiten mit dem Thema Braten, besonders mit dem bekannten Rinderbraten. Auch fehlt Ihnen manchmal das nötige Rezept oder die Anregung und so kam ich auf die Idee, Ihnen ein Rezeptvorschlag mitzugeben. Es soll Ihnen zeigen, dass nicht immer das Steak mit Kräuterbutter, das Höchste der Gefühle sein muss. Sondern ein guter Rinderbraten, auch Ihrer Familie oder Ihren Gästen ein Wohlbehagen am Tisch zu Hause bereiten kann. Gutes Gelingen.
Zutaten (für 4 Personen):
1 Rinderbratenstück um die 1000 g, Olivenöl, Pfeffer und Salz, etwas Zucker, 2 handvoll Wurzelwerk, bestehend aus Lauch, Zwiebel, Karotte, Sellerieknolle, Petersilienwurzel.<br /> Gewürze: Lorbeerblatt, Wacholderbeeren, 1-2 Nelken, 1 Zehe Knoblauch, 1 Flasche Rotwein, etwas süße Sahne. Je nach Jahreszeit, etwas Liebstöckl und Petersiliengrün.
Zubereitung: Heizen Sie Ihr Bratrohr auf 220 Grad vor. Nehmen Sie Ihr ausgewähltes Bratenstück, trocknen Sie es etwas ab, pfeffern und salzen Sie das gute Stück und braten Sie es in einer Kasserolle im heißen Olivenöl oder Kokosfett an. Benutzen Sie bitte kein Billigöl! Wenn Sie sich die Mühe machen oder noch raffinierter arbeiten wollen, können sie den Braten vor dem Anbraten mit durchwachsen Speck einwickeln. Ist das Schmorstück gut braun von allen Seiten geben sie das Wurzelwerk mit dem Knoblauch und den Gewürzen dazu, nochmals etwas kurz anbraten, und dann mit dem gesamten Rotwein ablöschen. Die Frage nach dem Rotwein ist Ihnen überlassen, vielleicht finden Sie ja einen günstigen Ökowein, den Sie hier verwenden können und lassen den Aldi-Wein mal im Regal. Die Kasserolle mit Deckel oder Silberfolie schließen und hinein ins Rohr bei 220 Grad C. eine Stunde lang. Anschließend den Deckel entfernen und weitere 1-1 1/2 Stunden in der Röhre weiter schmoren lassen. Gelegentliches Aufgießen wäre löblich, sonst könnte der Braten trocken werden, und nicht der Bauer am zähen Fleisch schuld ist.
Zum Schluss wird die Soße verfeinert mit süßer Sahne, vielleicht etwas nachsalzen, ein weiterer Schuss Rotwein je nach Lust und Laune, Gemüsebrühe würde ich nur im Notfall nehmen, probieren Sie was Ihnen Spaß macht, die Not macht ja meistens erfinderisch. Da ich aus Franken komme, schlage ich Ihnen den Kartoffelklos vor, aus gekochten Kartoffel, die sogenannten „Seidenen“. Ein köstliches Blaukraut wäre ein gute Beilage, aber vielleicht kann ein bunter Salat, mit etwas Brot, auch eine Lösung sein. Es gibt so viele Rezepte um einen Rinderbraten in eine Wonne zu verwandeln, von der Einfachheit bis hin zum Boeuf a`la mode. Kreativität ist gefragt, jonglieren Sie mit süßer Sahne, Creme fraiche, Soßenlebkuchen, alter Brotrinde, machen Sie das Rezept zu Ihrem Rezept oder warten Sie auf mein nächstes Rezept.
