Den berühmten Pichelsteiner Eintopf gibt es schon seit dem 19. Jahrhundert. Genauer gesagt seit 1874 von der Wirtin Auguste Winkler geb. von Kiesling. Ihr Wirtshaus stand in Grattersdorf, eine Ortschaft in Niederbayern. Die Bürger von Regen trafen sich traditionell am Kirchweihmontag zum Pichelsteineressen.
Der Eintopf ist unbeliebt, deklariert als Resteverwertung oder ein Armeleuteessen. Weit gefehlt, denn wie wäre es denn, einmal richtig am Gemüsemarkt aufmerksam die Herbstgemüsearten zu betrachten und ihre Vielfalt zu erkennen, und auch die Geschmacksvarianten. Nicht nur Lauch und Karotten werden angeboten, sondern verschiedene Kohlsorten, Rüben, Bohnen und Bohnenkerne, neue Karottensorten, Wirsing, Kürbis, bis hin zum schwarzen Rettich. Ein richtiges Eldorado, einfach viele Vitamine und Geschmack pur. Auch die verschiedenen Sorten von Kartoffeln, rote Sorten, Bamberger Hörnchen, mehlige Sorten und und und
Und da trifft der Pichelsteinereintopf den Herbst, mit seiner ganzen Fülle an Gemüsesorten, die jetzt erntefrisch überall angeboten werden.
Hier mein Rezept:
500g Angusgulasch, etwa 750g Gemüse alles klein geschnitten, Kartoffeln je nach Gusto, Brühe, Petersilie, Maggikraut frisch gehackt, Salz und Pfeffer, etwas Bohnenkraut und Kümmel, Lorbeerblatt, Knoblauch vielleicht, Fett zum Anbraten, 2 Zwiebeln.
Zubereitung:
Fleisch im heißen Fett anbraten, Zwiebelringe dazu geben, ca. 15 Minuten dünsten, würzen.<br /> Fleisch, Gemüse und Kartoffeln schichtweise in einen Topf geben und jeweils würzen. Anschließend mit Brühe aufgießen und ca. 1 Std. dünsten ohne umzurühren. Fertig.
Dazu gibt es schönes dunkles Bauernbrot und ein kühles Bier.
P.S. Beim Schreiben dieses Rezeptes vernahm ich den Duft vom Eintopf meiner Großmutter, er roch oft aus der Küche heraus. Wir liefen rückwärts aus der selbigen, wenn wir erfuhren von dem Unglück am Herd, denn der Pichelsteiner bestand bei uns aus Kraut und Kartoffeln, und die Fleischstückchen konnte man zählen, die landeten meistens auf dem Teller meines Großvaters, und wir suchten vergeblich nach dem bisschen Fleisch auf unseren Tellern. Da war jeder Bissen eine Qual, besonders als Kind, wer isst da schon Weißkohl und Kartoffeln gerne, aufgekocht bis das Ganze sich zu einem Brei formierte. Heute ist das völlig anders, die Krautsorten schmecken nicht mehr so extrem, sind viel milder geworden, und auch ohne Kraut kommt ein Pichelsteiner aus und natürlich garen wir Bissfest.
