Die leckere Ochsenschwanzsuppe gibt es in zwei Varianten, gebunden durch eine Mehlschwitze oder als klare Kraftbrühe. Die Suppe wurde durch die französische Kochkunst bekannt, wird aber immer wieder als original englische Oxtailsuppe angeboten. Traditionell wird mit Basilikum, Majoran, Bohnenkraut und Thymian gewürzt, am Ende mit Madeira, Brandy oder Sherry aromatisiert. In den Kochbüchern wird versichert, dass der Ochsenschwanz, egal ob er von einer Kuh oder von einem Ochsen stammt, kein Unterschied im Geschmack bestünde. Also weiter geht`s, nach dem Garen, gießen sie die Suppe durch ein Sieb und lösen sie das Fleisch von den Knochen und schneiden es in Stücke.
Wenn sie eine gebundene Ochsenschwanzsuppe vorziehen, dann bereiten sie eine Mehlschwitze und gießen mit der Suppe und dem Fleisch auf. Wir probieren es mal ohne der Mehlschwitze, geben Suppe und Fleisch wieder zusammen in den Topf , garen einige Minuten weiter und schmecken die Suppe ab, mit Rotwein, Sherry oder Madeira oder Ajvar und Dijon-Senf mit Paprikapulver. Also je nach Geschmack ausprobieren. Keine Angst, der Schwanz im Kochtopf bewegt sich nicht, wenn sie ihn probieren und ihn abschmecken wollen. Bei der nächsten Fleischbestellung, einfach einen Ochsenschwanz extra bestellen beim Bauern. Es lohnt sich. Wenn einem das Fleisch in der Suppe nicht reicht, ein guter Tipp, eine Beinscheibe mitbraten. Was man alles so kochen kann.
