Zutaten: 1 kg Rinderknochen, 1 Bund Suppengemüse, 1 Petersilienwurzel, Meersalz, Pfeffer,1 Zweig Rosmarin, 1 Zimtstange, etwas Zitronenschale, Lorbeerblatt, Wacholderbeeren, eine Knoblauchzehe grob zerdrückt, vielleicht etwas Zucker.
Teig:
4 große Eier, 5 Eßl. Wasser, Salz, 500g Mehl Type 1050, etwas Pflanzenöl.
Füllung:
1 altes Brötchen, 300g Blattspinat, 1 Bund Petersilie, 2 Zwiebeln, etwas Butter, 250g Hackfleisch, 1 Ei, Salz, Pfeffer, Muskat.
Zubereitung: Die Zutaten für die Suppe ungefähr 10 Minuten in 2 Liter Wasser kochen lassen. Den Schaum abschöpfen und dann den Sud etwa 3 Stunden sieden.
Den Nudelteig herstellen und ca. eine halbe Stunde im Kühlschrank ruhen lassen. Zur Füllung, am Besten den Spinat mit etwas Zwiebeln und Muskat in der Pfanne mit Olivenöl andünsten und zum Hackfleisch mit den restlichen Gewürzen zu einer lockeren Masse vermischen. Das Brötchen im Wasser einweichen und anschließend fest ausdrücken.
Den Nudelteig ausrollen, 20 Rechtecke ausschneiden, etwas Fülle jeweils in die Mitte der Teigstückchen geben und mit etwas Wasser das Ganze verschließen.
Die Maultaschen in der fertig abgeschmeckten Rinderbrühe, 10 Minuten oder mehr je nach Größe der Taschen, ziehen lassen.
Diese Mahlzeit kommt aus dem Schwabenländle und wird in verschiedenen Varianten serviert. Nur mit Spinat gefüllt, oder mit Bratwurstbrät, oder beides zusammen. Die Italiener kennen diese Maultaschen auch, hier werden sie mit Ricotta und Spinat gefüllt. Wer eine Vermischung zwischen Italien und dem Ländle will, empfehle ich den Parmesankäse über die Maultaschen zu reiben. Die Suppe sollte nicht zu salzig sein, aber scharf.
