Zutaten:
8 Sardellenfilets, Muskatnuss, Saft von einer Zitrone, 750g Rindfleisch (Braten von der Keule) 4 Eßl. Olivenöl, Salz, schwarzer Pfeffer, 2 Tassen trockener Weißwein, etwas Brühe, Wurzelwerk und eine Tomate.
Zubereitung: 5 Sardellen in schmale Streifchen schneiden und auf einen kleinen Teller legen. Mit frisch geriebener Muskatnuss kräftig würzen, mit der Hälfte des Zitronensaftes beträufeln und 15 Minuten marinieren lassen. Die restlichen Sardellen feinhacken. Das Fleisch abtrocknen und mit einem kleinen spitzen Messer in kurzen Abständen Löcher in das Fleisch stechen und diese mit je 1 marinierten Sardellenstreifchen füllen. Den Braten mit Küchengarn binden.
In einer Kasserolle das Öl nur leicht erhitzen. Die gehackten Sardellen dazugeben, kurz braten lassen, dabei mit einer Gabel gleichmäßig zerdrücken. Dann den restlichen Zitronensaft angießen. Das Fleisch in die Kasserolle geben. Mit wenig Salz und reichlich frisch gemahlenem Pfeffer würzen und zugedeckt bei schwacher Hitze etwa 2-3 Stunden schmoren lassen. Von Zeit zu Zeit mit dem Wein aufgießen. Mit dem Weißwein kann man ruhig üppig umgehen, zum Schluss mit etwas Brühe aufgießen.
Mein Tipp: Etwas Knoblauch täte gut, ist aber eine Geschmackssache, auch etwas Speck zum Anbraten wäre möglich. Sahne je nach Laune, aber wenig. Auch das Wurzelwerk kann man weglassen, probieren sie es einfach. Tomate ebenso.
Dazu gibt es ein gutes Weißbrot und Fenchel in Sahne geschmort. Der Salat um diese Jahreszeit kann von der Wiese sein, also Löwenzahn, Rucola, Gänseblümchen, Sauerampfer, Bärlauch, Zitronenmelisse, Pimpernelle, Wiesenrauke. Spargel in jeder Art und Weise ist angesagt um diese Jahreszeit, er schmeckt nicht nur gut sondern er entwässert auch. Momentan ist der Spargel ja noch etwas teuer aber dafür gesund, wenn es ein Biospargel ist.
