Wir stecken mitten in der Fastenzeit, bei vielen bleibt das Bier im Keller und der Rotwein im Schrank. Auch unser Biobauer hält die Fastenzeit ein und hat sich die Trennkost auferlegt. Oh weh, oh ach der Bauer wird uns ganz schwach. Doch bald ist Ostern, und das Fasten findet ein glückliches Ende. Wir träumen von warmen Tagen, das erste Grün und einer Festtagsrunde mit Freunden auf der Südseitenbank. Wie wäre es da mit Rindsroulade als Festtagsmenü. Dazu ein leckeres Kartoffelgericht, Salat und vielleicht schon den ersten Spargel. Nach so einer anstrengenden Fastenzeit, wird es Zeit sich zu belohnen. Ein Rezept das vielleicht jeder kennt, aber immer wieder weitere Anhänger findet, ist wie folgt:
Zutaten:
Jeweils eine Rindsroulade pro Person oder mehr, Salz und Pfeffer, mittelscharfer Senf, kleingehackte Zwiebeln, in Scheiben geschnittener gekochter Schinken, saure Gürkchen. Saure Sahne, etwas Zucker, Gemüsebrühe nach Bedarf, zum Abschmecken etwas Rotwein oder wenige Tropfen von der Worcester Sauce. Nicht zu vergessen das Wurzelgemüse und ein kleine Tomate.
Zubereitung:
Die Roulade wird von beiden Seiten gewürzt mit Salz und Pfeffer, eine Seite mit Senf bestrichen, darauf gibt man dann die kleingehackten Zwiebeln, die Scheibe Schinken und ein kleines saures Gürkchen. Das Ganze wird eingerollt und mit Bindfaden oder kleinen Holzspießchen zusammengehalten. Die Roulade wird im heißen Olivenöl angebraten, dazu gibt man das Wurzelgemüse, und abgelöscht mit etwas warmen Wasser. Der Bräter wird geschlossen und die Roulade wird langsam gegart. Die Soße mit den restlichen Zutaten abschmecken. Fertig. Die Roulade kann auch mit Frischkäse und Kräutern gefüllt werden oder mit Maispolenta. Viele Varianten sind möglich.
