Langsam gehen mir die Rezepte aus, die so in meinem Kopf herumschwirren und die ich locker vom Hocker preis gebe. Ca. 20 Rezepte habe ich schon an meine Fleischkunden vergeben und jetzt geht’s ans Eingemachte, denn meine Lieblingsgerichte sind doch nuuuuur für mich und meinen Gästen da. Naja! Sei doch nicht so , meckerte der Bauer und schreib doch mal dein Vitello! Meine Wenigkeit schluckte, denn dieses Rezept habe ich mir erbettelt. Von Anneliese aus Wasserburg, sie ist eine begabte Köchin, wenn ich da nur an die eingemachten süßsauren Bohnen oder Zucchini von ihr denke, läuft mir das Wasser im Munde zusammen. Naja, dann sollen meine Rezeptinteressierten es haben, aber diesmal mit Ochsenfleisch, und nicht mit dem nicht gerade würzigem Kalbfleisch. Denn die Thunfischsoße überdeckt meistens das Kalbfleischaroma und übrig bleibt eben eine Thunfischsoße. Also los geht’s…….
Ca. 1kg Rinderbraten, 6 Sardellenfilets, Lorbeerblatt, 1 Zwiebel, 1 Möhre, 1 Staudensellerie, Petersilie, 1 Gewürznelke, Salz und Pfeffer 125 ml Weißwein.
Thunfischmayonnaise:
200g Thunfisch aus der Dose, 4 Sardellenfilets, 1 Teelöffel Kapern, 1 Eßl. Zitronensaft, schwarzer Pfeffer, 150 ml Mayonnaise, Olivenöl.
Zum garnieren:
Zitronenscheiben und Kapern. Rinderbraten mit Sardellen spicken, würzen mit Salz und Pfeffer, anbraten und aufgießen mit Wein und Wasser bis das Fleisch bedeckt ist. Das Wurzelwerk und die übrigen Gewürze dazugeben und 2½ Stunden köcheln lassen. Wenn das Fleisch gar ist, abkühlen lassen. Das erkaltete Fleisch in feine Scheiben schneiden, und auf einer Platte fächerartig anrichten. Nun den Thunfisch und die Sardellen, Kapern, Zitronensaft und Pfeffer mit der Mayonnaise und etwas Olivenöl zu einer feinen Paste vermixen. Mit der übrigen geblieben Suppe würzen, abschmecken. Das Rindfleisch mit der Paste bedecken und über Nacht im Kühlschrank kühlen. Mit Zitronenscheiben und Kapern garnieren. Als Beilage gibt es Weißbrot, oder Salzkartoffeln, Kopfsalat.
Mein Tip: Zur Suppe gebe ich noch Zitronenschale und Knoblauch, auch etwas Zucker tut gut. Das Wasser kann weggelassen werden und nur mit Weißwein das Fleisch bedecken. Die Thunfischmayonnaise kann auch verdoppelt werden, so hat dann jeder Gast genügend Soße.
Das war das Vitello tonato von der Anneliesemarliese. Bim Bim, Kling Kling, der Weihnachtsmann ist da, und es wäre mal wieder soweit, die Weihnachtszeit umkreist unser alltägliches Geschehen. Mein Hutzelbrot ist schon gebacken, doch so manch anderes Rezept lässt auf sich warten. Wir wünschen Euch eine gesegnete Weihnachtszeit, einen schönen Advent und viel, viel Zeit für Liebe und Gedult.
