Ein Rezept mit vielen Varianten, auf der ganzen Welt werden Hackfleischbällchen gebraten, gekocht, roh gegessen, mit Rindfleisch, Lammfleisch, Schweinefleisch sogar Ziegen und Hasenhackfleisch variiert. Der wohl berühmteste Vertreter seiner Gattung ist der Hamburger. Die Erfinder streiten sich darum, ob in einer Kneipe in Hamburg, oder irgendwo in Amerika oder in Berlin Mitte als Bulette, das Gericht erfunden worden ist. Wir kennen alle das runde Ding in der Pfanne, das von den Kindern geliebt, oder mittlerweile im Auto gegessen wird. Das Pflänzlein sollte doch weiterhin am Tisch serviert werden, denn es gibt Möglichkeiten die Frikadelle zu verfeinern und damit zu einem weiteren Höhepunkt am Mittagstisch vorzustellen.
Das Grundrezept:
Hackfleisch, hierzu nehmen wir unser Angusochsenhackfleisch, ca. 500g, salzen und pfeffern es, geben 1 Ei, ein aufgeweichtes altes Brötchen hinzu, und los geht es mit dem Verkneten. Würzen mit frischer Petersilie, Paprika oder Majoran, Muskat, Cilli. Alles ist möglich je nach Geschmack. Knoblauch sollte nicht vergessen werden.
Mein Vorschlag wäre, das Klösschen zu füllen. Ganz einfach, mit Ziegenfrischkäse. Den Fleischkrapfen dann in der Pfanne mit Kokosfest oder Butter oder Olivenöl rundherum braten. Die Königsberger Klopse werden mit Sardellen gefüllt, werden aber in Salzwasser gekocht. Hierzu gibt es Kapernsoße. Als Beilage zu all diesen Klösschen oder wie sie auch alle heißen, kann jeder selbst erfinden. Wenn keiner eine Lust hat sie in der Pfanne zu braten, dann geht das auch auf dem Kuchenblech im Backofen, mit etwas Geduld werden sie hier auch knusprig und braun. Kurz vor dem großen Essen können wir die Köttbullar auch mit etwas Parmesan oder Sesam bestreuen. Das Klößchen kann man auch zum Fasching anziehen oder verkleiden mit angekochten Weißkohl oder leicht gegartem Blaukraut. Das bekannteste Pflänzchen wird in Ei und Semmelbrösel gewälzt und dann in Butter köstlich braun gebraten. Ob kalt oder warm, aus der Pfanne oder aus dem Bratrohr, in der Semmel oder auf dem Teller, mit Soße oder mit dem roten Zeug da aus der Flasche, immer gut, und bei allen beliebt. Schnell gegessen oder schön serviert.
