Warten auf das Frühjahr, ist die Devise. Der Schnee schmilzt, das Wasser kommt, und unsere Wiesen haben sich in Seen verwandelt. Unsere Kälber sind fast schon alle geboren und nun muss nur noch das schöne Frühjahr kommen. Aber zuvor kam bei uns mal eben der Fuchs vorbei, und holte sich Vorrat für die nächsten Tage. Große Trauer im Hühnerstall, nach dem Motto: Fuchs du hast die Gans gestohlen, fehlen uns jetzt etliche Enten und Gänse. So ist es halt mit dem Appetit auf Geflügel.
Appetit möchte ich auf mein neuestes Rezept machen. Rinderfilet im Blätterteigmantel.
Zutaten: ca. 500g Filet, 2 Packungen Blätterteig, Ruckcolasalat, Bratwurstbrät, Salz, Pfeffer, Olivenöl, Champignons, Schalotten, Petersilie und Knoblauch, ein Ei. Das Rinderfilet wird mit Salz und Pfeffer gewürzt und in Olivenöl angebraten. Je nach Geschmack blutig oder unblutig. Das Bratwurstbrät wird angebraten und mit Salz, Pfeffer und Petersilie gewürzt. Die Champignons mit Knoblauch und Schalotten anbraten und mit Salz und Pfeffer würzen. Nun nimmt man ein Backblech, benetzt dies mit Wasser und legt es mit den Blätterteigblättern aus, die vorher etwas mit dem Nudelholz ausgewalkt werden. Darauf wird als erste Schicht etwa 300g Ruckcolasalat verteilt, darüber kommt das Bratwurstbrät, anschließend die Pilze und zum Ende wird, in die Mitte, auf den verschiedenen Schichten das angebratene Filet gegeben. Der Blätterteig wird mit dem Gemüse, um das Filet, zu einer Rolle geformt. Diese Rolle wird mit einem aufgeschlagenen Ei eingepinselt. Im vorgeheiztem Ofen bei 175 Grad ca. 45 Minuten backen. Dazu gibt es Salat und einen guten Wein.
Leider weiß ich, dass wir mitten in der Fastenzeit stecken und wir uns von Wasser und Brot ernähren sollen. Das Rezept ist ja nicht gerade ein Fastenschmankerl, vielleicht tauschen wir den dazupassenden Wein mit Bier, natürlich ein hochprozentiges Fastenbier.
Unser Bauer stellt sich der Fastenzeit und meidet Bier und Süßigkeiten, das Gejammer ist groß, er zählt schon die Tage bis Ostern und bekommt statt seiner „Weiße“, Mondwasser.
